CARA MEMBUAT
#SAMBAL IJO :
(1) Cut the large green chilies into pieces and cut the tomatoes into 2 parts.
(2) Boil large green chilies, green cayenne pepper, tomatoes, shallots, garlic until wilted, remove and drain.
(3) Then puree all the ingredients by pulverizing.
(4) Heat the platinum mamaco then add the mashed ingredients and mix well.
(5) Add salt, sugar, powdered broth and lime leaves then cook until the oil is reduced.
(6) Once cooked, remove and serve green chili sauce.
#SAMBAL TERASI :
(1) Cut the red chilies into small pieces, and cut the tomatoes into 2 parts.
(2) Heat the platinum mamaco then add the shallot, garlic, cayenne pepper, tomato and wait until the 4 ingredients are wilted.
(3) Remove the wilted shallots, garlic, cayenne pepper, and tomatoes then puree by pulverizing.
(4) Add the shrimp paste and mix again until all ingredients are well mixed.
(5) Put the mashed ingredients into the pan with the remaining oil, add salt, sugar, and powdered stock. Cook again until it shrinks and adjust the taste.
(6) Once cooked, remove and serve.
#SAMBAL MATAH :
(1) Cut into small and thin pieces of cayenne pepper, green cayenne pepper, shallots, lime leaves, and lemongrass.
(2) Put all ingredients in a bowl and stir with a spoon until evenly mixed.
(3) Heat the mamaco platinum a little
then pour the hot mamaco platinum into the mixed ingredients in the container. Stir again until all ingredients are evenly mixed.
Prepare a serving plate and serve the Matah sauce.
